Randomness and Discoveries

I've been struggling all day trying to decide about what to write.  It's been a pretty uneventful week.  It was the first whole week without any students, and I think I've been managing the change with no dining hall pretty well.  For lunch I've been going to the cafe at the Business Building, salads and turkey sandwiches have become my best friends.  Dinners have been on my own - I had a couple Weight Watcher frozen dinners, had Subway one night, and made a delicious parmesan crusted Tilapia two nights in a row (it was that good - thanks, Sis, for the idea of adding the parmesan!).  I used frozen Tilapia filets (unthawed them, of course), put a small amount of butter on each one, sprinkled them with some salt, pepper, and grated parmesan cheese.  Stuck them in the oven at 350 degrees for 20-30mins and voila! 

The other fairly exciting food discovery I had this week was Barilla Plus pasta.  I will be the first to admit that I am a major pasta snob.  Like any good Italian, I love me some pasta, but I am selective.  I will eat Olive Garden (though I usually go for something outside of ordinary pasta, like ravioli, manicotti, cavatelli, or something with an alfredo sauce), or a couple select local places, but I generally do not order pasta out.  Similarly, when it comes to shopping for pasta to make at home, the brand matters.  In general I have nothing against generic brands, but there is no generic for my pasta...it's always Barilla.  A few weeks ago in my WW meeting, someone mentioned really liking the Barilla Plus.  It's a multi-grain pasta, but said that unlike the "whole wheat" pasta, you really can't taste a difference.  Well, I was at the store after that meeting and saw some so I thought I'd try it.  I was a bit nervous.  It sat on my shelf untouched for several weeks.  But, this week I was trying to find something to go with my Tilapia and figured I'd finally give it a try.  IT IS SO TASTY!!  Comparing the boxes side by side, there is a clear color difference between the pastas, but when cooked and sitting on your plate it's really not evident that it's not regular white pasta.  Now, it's worth the same amount of points, but the multi-grain is better for you than the white flour.  I will definitely be having it again!

I had another decent workout week - again, nothing bad but nothing fantastic.  Saturday was gorgeous around here so it was great to get outside a little bit.  I took my bicycle to the gas station to fill up the tires!  I didn't actually get out on the bike this weekend, but getting the bike in the car was a workout in itself!  As much as I'm looking forward to riding it, the bike may stay in the car until I get home for the summer next week.  We'll see how nice it gets this weekend if I'm tempted to get it out...

Since it was so nice this past week, I got out my summer clothes in preparation for the warm weather.  I tried on all my shorts and capris to see how they fit, and there were actually a couple that were too big, and even more exciting was that NONE of them were too small!!  I even pulled out some that I didn't even wear last year cause they were too tight, and I dug a few pairs of jeans out of the bottom of my pants drawer that I hadn't worn in several years, and they all fit too!!  The jeans have been great for work this week - I can dress down more when I don't have meetings since I don't have random students dropping in on me, so it's been awesome to have some new (less baggy) jeans to wear.  While they fit much better than the jeans I now HAVE to wear belts with, they themselves are a little loose.  Perhaps my plan to wait to buy new pants until the fall is an even better idea than I originally thought!  Rediscovering all these clothes I had but couldn't wear has been better than buying all new clothes....cause this way I don't have to spend any money!!
